Step 1 :Preparation of Mutton

- First, we thoroughly washed the mutton. Then, we will immerse it in hot water and bring it to a boil. Once it starts boiling, a layer of scum will appear on the surface, which we should discard. This should be done every time when cooking mutton.





- Next, we will add 1 teaspoon of garlic paste and 1 teaspoon of salt, adjusting the salt according to taste. Then, we will continue to boil it over a medium flame.







Step 2:Preparing Red Chilli Paste

- I have taken dried red chillies. I will wash them, and after washing, I'll bring them to a boil in water. Here, I have placed them in a saucepan and brought it to a boil; they will become slightly soft.




 

- Once softened, I will transfer them to a blender or mixer. I will add the same water to make a paste-like consistency. 




- After that, I will strain it through a sieve because there are often residue and seeds on top that we don't want. We need the water infused with the chilli flavour. So, here we have it.






Step 3 :Preparing Onion Paste:

First, we will heat mustard oil in a pan. Once it's hot, add roughly chopped 3-4 onions to it. 




-Fry the onions until they turn golden brown.




-  After that, remove the fried onions from the oil and blend them in a mixer grinder. You can also add a little water to make a paste.

If you prefer a whiter paste, you can fry the onions for a shorter time. Otherwise, you can fry them normally.



- Set aside the onion paste.

- Check if the mutton is soft; if not, continue boiling until it reaches the desired tenderness.
